Origin — Los Altos de Jalisco, 2,030 m elevation. Agave grown organically in iron-rich red soil, hand-harvested at full maturity by our jimadores. Cooked slowly in traditional brick ovens, naturally fermented in open oak wooden vats with wild yeasts, and twice-distilled in small copper pot stills. Water drawn from a 400 meter natural well on our own land.
