Our Story

Certified organic. Zero additives. Always.

For five generations the Tres Ese family has worked the red earth of Los Altos de Jalisco — without herbicides, without synthetic fertilizers, without shortcuts. Every agave is grown organically and hand-selected at full maturity, then coaxed slowly into tequila by fire, wood, copper and time.

Nothing is added in the bottle. No sugar. No glycerin. No flavoring. No coloring. Only what the plant, the soil and the highland sun quietly intended.

The Process

The Process

From highland red soil
to hand-numbered bottles.

01 — Cultivation

Highland grown at 2,030 meters. Hand harvested.

Our fields rest high in Los Altos de Jalisco, where iron-rich red soil and cool mountain nights coax six to eight years of slow, patient sweetness into every organic agave azul (tequilana). No pesticides. No synthetic inputs. Only natural compost and the highland sun.

When the plant is ready — and not a season sooner — our jimadores cut by hand, heart by heart, as their fathers did before them.

02 — Slow Roasting

Additive-free. Slow-roasted in brick ovens.

The piñas rest in traditional brick ovens — hornos de mampostería — where low, steady heat coaxes the agave's natural sugars open over days, not hours. Nothing is added. Nothing is rushed. The sweetness you taste is the plant itself, unhurried.

03 — Natural Fermentation

Alive fermentation. True character.

We ferment in open oak wood vats, with water drawn from a 400 meter well on our own land — filtered by centuries of volcanic rock — and only the wild, native yeasts that live on the oak wooden pores in the vats in our hacienda.

It is slower. It is less predictable. It is exactly how tequila was always meant to be made — patient, deliberate, alive.

04 — Distillation

Patiently distilled in copper.

Twice distilled in copper stills, the spirit is drawn in tight, carefully separated cuts — always heart, never haste. Copper is not a choice of convenience; it is what gives Tres Ese its clean, rounded soul.

05 — Bottling

Bottled, corked and labelled by hand.

Every bottle is filled, corked and labelled. Every small batch is finished one bottle at a time — inspected, wiped clean, and set aside to rest before it leaves the distillery.

No assembly line. No machinery between us and you. Just the final, unhurried artisanal gesture that closes a circle of five generations in the making.

03 · Extra Añejo

Extra Añejo

Aged in small batch french oak barrels, the agave is still there — it has to be — but now it speaks in a lower register: cocoa, leather, old library. A fantastic, domesticated with time, fine high proof Tequila Tres Ese to sit with, the way you sit with a fine cognac.

Nose
Dark cocoa nib leads into a cluster of dried figs, sweet pipe tobacco and a touch of worn leather.
Palate
Dense and velvety, with chocolate and candied orange folding into espresso and aged oak.
Finish
Very long and warming, closing on aged wood and spice with a soft whisper of agave.

Margarita Tres Ese in a chilled coupe

Blanco Orgánico

Margarita Tres Ese

The classic, made cleanly.

  • 2 oz Tres Ese Blanco Orgánico
  • 1 oz fresh lime juice
  • ¾ oz agave nectar
  • sea salt rim

Shake hard with ice. Strain into a chilled coupe with a half-salt rim. Garnish with a lime wheel.

Paloma de Jalisco with grapefruit

Highland sun in a tall glass.

  • 2 oz Tres Ese Blanco Orgánico
  • ½ oz fresh lime juice
  • pink grapefruit soda, to top
  • pinch of sea salt

Build over ice in a tall glass. Top with grapefruit soda. Garnish with a wide grapefruit peel.

Reposado Old Fashioned over a single ice cube

Slower than its bourbon cousin.

  • 2 oz Tres Ese Reposado Orgánico
  • ¼ oz agave syrup
  • 2 dashes orange bitters
  • orange peel

Stir with ice for 30 seconds. Strain over a single large cube. Express an orange peel over the glass.

Stir with ice. Strain into a chilled rocks glass over a single cube. Garnish with a wide orange peel.

Añejo Manhattan with a brandied cherry

  • 1 oz sweet vermouth
  • 2 dashes Angostura bitters
  • brandied cherry

Stir with ice for 30 seconds. Strain into a chilled coupe. Drop a single brandied cherry to finish.

  • ½ oz agave syrup
