Highland grown at 2,030 meters. Hand harvested.
Our fields rest high in Los Altos de Jalisco, where iron-rich red soil and cool mountain nights coax six to eight years of slow, patient sweetness into every organic agave azul (tequilana). No pesticides. No synthetic inputs. Only natural compost and the highland sun.
When the plant is ready — and not a season sooner — our jimadores cut by hand, heart by heart, as their fathers did before them.
